Potato Bread & Soda Bread

Ulster Fry 

 

 

 

 

 

 

 

 

INGREDIENTS

350g cooked and mashed potatoes

150g plain flour

1/2 teaspoon salt

pinch castor sugar

TO PREPARE:

Ensure your potatoes are dried out prior to mashing. Place in a bowl and sift in the flour. Add the salt and sugar and mix to a dough. Knead lightly in flour and roll out to about 1/4 of an inch. Place a plate on top and cut around it.

Cut into quarters. Heat a griddle or non-stick pan to medium hot and add the potato bread.

Cook for about 3 minutes on each side or until golden. Cool on a rack and either eat straight away or fry with bacon.

 

SODA FARLS

INGREDIENTS

450g plain flour

1 tsp baking soda

1 tsp salt

400ml buttermilk

TO PREPARE

Sift the flour baking soda and salt into a bowl and make a well in the centre. Add the buttermilk and mix to a dough. Knead on a floured surface and then roll to 1/2 an inch thick.

Roll into a circle and then cut into quarters. Heat a griddle to medium heat and very lightly flour it.
Cut into quarters

Place the farls in the griddle and cook for 3-4 minutes on each side. Cool slightly on a rack

Fry farls for an Ulster fry or eat with butter and jam!
