Red Salsa

Came across this recipe today in an old cowboy cookbook

Red Salsa
  • 3 ripe tomatoes
  • 2-4 chopped chillies
  • 2 tablespoon chopped parsley & chives
  • 2-4 teaspoons chopped onion
  • 2 chopped garlic ears
  • 1 teaspoon lemon juice
  • Pepper & salt


Mix onion and garlic in a bowl and allow with 2 cups of boiling water to sit for 1 hour, then allow to cool.

Drain the onion and garlic mix. Remove skin and seeds from tomatoes and add to onion and garlic, add rest of ingredients and leave in fridge until chilled through
